The One-Pan Pasta Recipe That Broke the Internet This Week

Every few months a recipe escapes food TikTok and takes over regular kitchens. This week it is a stunningly simple one-pan lemon garlic pasta from a home cook in Naples who films everything on a scratched iPhone.

The ingredient list

  • 200g dried spaghetti
  • 4 fat garlic cloves, thinly sliced
  • 1 whole lemon (zest + juice)
  • 60g cold butter, cubed
  • A generous handful of parmesan
  • Salt, black pepper, olive oil

The method (that everyone is arguing about)

You cook the spaghetti in just enough water — about 500ml — so the starch stays concentrated. Garlic goes in cold oil, never hot. Butter goes in off the heat. Parmesan goes in only after the pan has cooled for 30 seconds, otherwise it clumps.

“The pan should be silent when the cheese goes in. If it sizzles, you failed.”

Why it works

The concentrated starch water + cold butter + off-heat parmesan creates a natural emulsion — the same trick behind proper cacio e pepe. No cream, no shortcuts, and somehow the result is glossier than a restaurant plate.
